High Protein, Low-Carb Air Fryer Bread Loaf Recipe

Jeff sent us a DM on Instagram saying "I'm a gym rat and have been having a really hard time meeting my protein requirement after a nose/throat surgery, you guys have been a godsend."

Jeff and his wife developed this super high protein bread recipe using our UnbelievaFlour. Jeff says he makes himself a loaf every week. 

Ingredients needed:

 

 

Directions:

 

  1. Mix all ingredients with 1 1/4 cup warm water using mixer
  2. Knead thoroughly
  3. Put in Ninja Foodi or other brand of air fryer
  4. Proof @ 95F for 1hr
  5. Re-knead and add 1/4 cup water to bottom of Ninja
  6. Proof @ 95F for 1hr 
  7. Switch to Steam crisp mode and cook at 365F for 15 min, then flip loaf, lower temp to 335F and finish baking for 20 min.

 

Cool on rack for 15min and enjoy!

 

While we don't have the nutritional facts for the loaf, rest assured it's super low-carb, keto-friendly and very high in protein. Vital wheat gluten is 70-80% protein, with only 4 carbs per serving. UnbelievaFlour is even higher in protein, about 90% with only 2g carbs.
