Here's what she shared with us:

Just wanted to share my latest creation using your UnbelievaFlour.
I make flatbreads using lupin flour and oat fiber which has zero blood sugar impact.  Decided to try your flour having so much success with your breads and sweet treats.

Firstly, I am amazed by how well the dough came together!  It was like it was meant to be made into a dough.  With such success, I'm going to continue making other baked goods to test.  I'm a huge fan of oat fiber being zero glycemic load and index, hygroscopic and a good binder.  I'll share this as well (I'm @piscesyin72 on Instagram and @MaralinaDG on FB and YouTube).

Recipe:
UnbelievaFlour Flatbread (or tacos shells or chips or "popcorn")
1 cup oat fiber 
4 tbsp of psyllium husk powder 
2 cups lukewarm water
1/2 tsp of baking powder (optional - will rise)
1/2 tsp of salt OR any additional seasoning as preferred (I used seasoned salt and Garlic Black Pepper)
For the pan:
olive or avocado oil OR non-stick spray as needed

1. Whisk all ingredients together well then knead into a dough and let it sit for 10 to 15 minutes.  Dough should be pliable, non-sticky and easily moldable

2. Split dough into 4 or more pieces then lightly spray with the non-stick spray.  Roll it out in between wax or parchment paper and use a cutter to make round shapes (optional).  Add the oil to a pan OR spray the pan well with the non-stick spray.  Allow for a little extra oil in the pan when browning both sides of the flatbread

3. Cook each side of the flat bread until golden browned then use however preferred such as tacos, flatbread, chips, etc.

Bread can be air-fried until crispy, heated in the microwave or eaten cold.
